Providence Health & Services Sous Chef in Centralia, Washington
Providence is calling a Sous Chef (1.0 FTE, Days) to Providence Health & Services in Centralia, WA.
We are seeking a Sous Chef to plan, direct and evaluate the purchase, production, presentation of food for patients, café and catering to ensure that standards of safety, nutritional value, quality and performance are maintained.
In this position you will:
Under the direction of the Executive Chef be responsible for recipe, menu and concept development within the established departmental guidelines.
Be responsible for overseeing departmental receiving, and inventory management.
Ensure conformance with JCAHO, state and local regulations as well as compliance with all HACCP, department, medical center and SWR system policies and procedures.
Be responsible for the direction and development of culinary staff, assuring that food production and serving staff are properly trained and supported in order to accomplish their job routines.
Under the direction of the Executive Chef conduct ongoing culinary education in all applicable culinary and customer service aspects of food and cooking.
Develop and evaluate staffing levels for current and forecast needs.
Perform and/or assist with all aspects of human resource management.
Required qualifications for this position include:
Degree in Culinary Arts. (Certification of completion from an accredited culinary trade school (2-4 Year program) or American Culinary Federation Education Institute (ACFEI) apprenticeship program (certification 4-5 year program).
Minimum of 2 years food culinary or supervisory role within a large, high volume operations such as a Medical Center, Fine Dining Restaurant establishment or Hotel including one year on the job experience in Catering, Room Service, Wait Staff, Banquet set-up, Café Retail Service, or culinary cooking.
Current State of Washington Food Handlers Permit.
ServSafe Certificate required within 90 days of hire.
